Cakes, cookies, pies, and other sweet treats make me think of the most special people in my life...My Family!! Desserts have always been a favorite in our home, yet I tend to mostly make sweets for others. When I am in the kitchen working on a yummy dessert, my kids will always ask "Who are you making THAT for?" I love the look on their faces when I explain that "I am making this for some VERY special people, my family."
The savory foods I make and eat tend to be explained by ethnic area. Mexican, Chinese, Italian, TexMex, Japanese, Thai, Greek, Cuban, and so many others! I was a terribly picky eater as a child. (Ask my mom!) But have mostly grown out of it. My sweet husband has introduced me to a wide array of deliciousness since we first met, so now I realized that I love food. (I still have hate raw onions, and gristly meat.) Food and family go together and really help us connect.
I love the idea of pancakes. Fluffy buttermilk pancakes covered in melty butter and maple syrup. Mmmmm. As an adult, this is all perfectly normal. I have had at least 7 children in my home for the past 8 years. Imagine for a moment, that same stack of fluffy buttermilk pancakes with butter and syrup, in the hands of a child. Sticky fingers, sticky chairs, sticky sticky everywhere! After a few years of cleaning up sticky pancake messes, I had a thought. If I sweeten and flavor the pancakes, we won't need syrup. That is exactly what I have done ever since.
1lb orange lentils
6-8 cups hot water
2 Tbsp chicken bouillon
1 Tbsp curry powder
8oz diced summer sausage
12oz frozen peas and carrots
Rinse lentils in cold water before cooking. No soaking needed.
Add lentils to hot/boiling water and simmer on medium to low for 10 minutes, stirring frequently.
Add seasonings and sausage. Continue cooking until lentils reach desired tenderness.
Add frozen veggies and stir. Remove from heat and let soup heat the veggies through.
This soup goes great with naan or any type of crackers.
